We are in our second year of Passover in a pandemic. 'Next year in person' didn't happen for this year, but here's hoping for next year! While the world is starting to open up as more people are getting vaccinated, much of our life is still on Zoom, and tradition helps us feel a sense of normalcy.

Passover commemorates the exodus of the Jews from Egypt. During the first two nights of the holiday, families gather for a Seder to tell the story over a meal, full of symbolic foods. This year, like many folks, I'll be doing a seder over Zoom for the second year in a row, and while that is non-traditional, the elements of the Seder plate remain the same. Charoset symbolizes the mortar that the Jews used to build the Egyptian Pharaohs' buildings, as well as the sweet taste of life and liberation.

I love making Charoset once a year, and while I won't be able to share it with as many people this year, I wanted to share the recipe with you all. There are many different ways to make Charoset. It can be made in a food processor, but I prefer the chunkier texture of hand cutting the apples. It takes longer, but is worth it! This recipe is a variation of a recipe in a cookbook that I grew up with. 

Prep time: 1 hour (depending on your knife skills)
Yield: About 4 pint sized mason jars full

Ingredients 

  • 6 apples
  • 1.5 cups walnuts
  • 1 teaspoon cinnamon
  • 1 tablespoon sugar
  • 1/2 cup sweet red wine

Directions

  1. Peel and chop the apples
  2. Chop the walnuts
  3. Combine the apples, walnuts, cinnamon, sugar and red wine in a mixing bowl 
  4. Enjoy with some Matzo! 


Roasted Chickpea, Farro and Arugula Mason Jar Salad February 22 2021, 0 Comments

Even though a lot of us are continuing to work from home, mason jar salads are still a great lunch option. While we're not grabbing them for a quick lunch on the go, meal prepping still saves a lot of time and hassle throughout the week. So I thought I'd share my current favorite mason jar salad recipe. 

I love an excuse to roast some chickpeas and I choose to pair them with farro, which contains more fiber than other grains like rice and even quinoa, and is high in protein. This salad is full of other interesting flavors and textures, like the cranberries and sunflower seeds. Here's the full recipe.

Prep time: 1 hour
Yield: 5
Serving Size: 1 16oz mason jar

Ingredients 

  • 2 cups of uncooked chickpeas
  • 1 cup of dry farro
  • 4 cups of arugula
  • 1/2 cup dried cranberries
  • 1/8 cup parmesan cheese
  • 1/8 cup sunflower seeds
  • 1 lemon
  • 1 tsp sugar
  • 1/8 cup olive oil
  • garlic powder
  • salt
  • pepper

Directions 

  1. Roast the Chickpeas: preheat the oven to 450 degrees; drain the chickpeas and blot dry; mix in a bowl with olive oil, garlic powder, salt and pepper; spread out on a baking pan; bake for 30-40 minutes until crispy and brown. 
  2. Cook the farro: rinse 1 cup of farro then place in a pot and add 3 cups of water. Bring to a boil and then reduce heat to medium-low and simmer for 30 minutes. Drain any excess liquid and then refrigerate.
  3. Make the salad dressing: combine the olive oil, juice from 1 lemon, sugar, salt and pepper. Stir. (depending on how much dressing you like, you may double this recipe)
  4. Layer the ingredients evenly across 5 16oz mason jars in this order: dressing, dried cranberries, farro, chickpeas, arugula, cheese, sunflower seeds.
  5. Store upright in the fridge and enjoy all week long!


White Christmas Cocktail December 22 2020, 0 Comments

'This the season! If you're looking for a cocktail to serve after your Christmas dinner at home this year... this is your drink! It's a delicious dessert in a mason jar and it's so easy to make. 🎄🎁

Prep time: 5 mins 
Yield: 2
Serving Size: 1 8oz mason jar

Ingredients

  • 3 oz Kahlúa 
  • 3 oz Godiva White Chocolate Liqueur 
  • 3 candy canes 
  • Ice 

Directions

  1. Use a cheese cloth and a roller to crush a candy cane into powder for the rim of the mason jar.
  2. Place the candy cane powder on a small plate and pour some of the white chocolate liqueur onto another small plate.
  3. Rim the 8oz mason jars by dipping into the liqueur first and then the crushed candy cane (do this quickly because the candy cane powder gets sticky quickly and then it won't stick properly to the rim). 
  4. Pour 1.5 oz of the Kahlúa and 1.5 oz of the white chocolate liqueur into each 8oz mason jar. 
  5. Fill the rest of the jar with ice and stir. 
  6. Garnish with a candy cane and enjoy!

Latkes and Homemade Apple Sauce December 12 2020, 0 Comments

HAPPY HANUKKAH!

One of my favorite traditions during Hanukkah is making latkes. These delicious potato pancakes symbolize the miracle of Hanukkah because they are fried in oil. There are tons of recipes and variations out there, but this one is my family's go-to.

Prep time: 2 hours
Yield: 10 servings
Serving size: 4 latkes

Ingredients

  • 7 large Idaho potatoes
  • 3 large yellow onions
  • 4 eggs
  • 1/2 cup flour
  • 1 tablespoon salt
  • 1/2 teaspoon black pepper
  • Vegetable oil for frying

Directions

  1. Peel and grate the potatoes (use the large holes on your grater).
  2. Chop the onion and mix with the grated potatoes.
  3. Use a sieve or strainer to drain some of the liquid from the potato and onion mixture. 
  4. Mix the egg whites and yokes and then add to the potato, onion mixture. 
  5. Add the flour, salt and pepper to the mixture. 
  6. Heat 1/8 inch oil in a frying pan on the stovetop and then drop large spoon-fulls of the batter into the oil. 
  7. Fry until browned on one side and then flip to fry the other side. 
  8. Once browned and crispy, remove the latkes from the oil, drain the excess oil and set aside to cool off before enjoying.

Nothing pairs better with latkes than apple sauce. I was disappointed when I recently went to my local grocery store and could not find any apple sauce without corn syrup in it. Not to mention, apple sauce usually comes packaged in plastic. So, here is an easy, corn syrup-free and plastic-free recipe:

Prep time: 30 mins
Yield: 4 servings
Serving size: 1 4oz mason jar

Ingredients

  • 4 large apples
  • 1/2 cup water
  • 1/4 cup white sugar
  • 1/2 teaspoon ground cinnamon

Directions

  1. Peel, core and chop the apples.
  2. Combine the apples, water, sugar and cinnamon into a saucepan.
  3. Cover and cook on medium heat for about 20 minutes or until the apples are soft. 
  4. Place the mixture into a blender and blend until smooth.
  5. Pour into 4oz mason jars and store in the fridge. 


Coffee Banana Smoothie November 05 2020, 0 Comments

Raise your hand if you have been staying up late these past few nights anxiously awaiting election results! 🙋‍♀️ 

This smoothie is the perfect pick-me-up! Bananas are an energy booster packed with potassium and fiber. Chia seeds are considered a 'super food' because they're full of protein and fiber. And of course the coffee adds a nice kick. If you make cold brew coffee, or pre-refrigerate your hot coffee, this smoothie takes less than 10 minutes to prepare. Cheers! 

Prep time: 10 mins

Serving Size: 1 16oz mason jar

Ingredients

  • Brewed Coffee (1/2 cup)
  • 1 Banana
  • Chia Seeds (1 tbsp)
  • Almond Milk (1/2 cup) 
  • Cinnamon (1 tsp)
  • Ice (1.5 cup)

Directions

  1. Brew coffee (either cold brew, or regular brew and set in fridge to cool)
  2. Place all ingredients in a blender and blend until smooth
  3. Optional: make it alcoholic! Add some coffee liquor if you'd like, I won't tell. 
  4. Voila! A delicious and caffeinated smoothie!

This year, the Jewish High Holidays will be different (thank you Covid 😠). For the first time since I can remember, I won't be attending services at synagogue, or going to over family friends' houses to celebrate the Jewish new year, or to Break the Fast. Despite this year's changes, Jewish traditions, especially with regard to food, remain the same. It's tradition to dip apples in honey for a 'sweet new year.' So in honor of that, I made this Apple Honey Martini. It's dangerously delicious and easy to make.  

Even in the Covid era, there is so much to be grateful for (like vodka 😇). Here's to a Sweet New Year! 

Prep time: 10 mins 
Yield: 1
Serving Size: 1 8oz mason jar

Ingredients

  • 1.5 oz vodka
  • 1.5 oz apple juice
  • Apple honey simple syrup: 1/4 cup honey, 1/4 cup water (this will yield enough for a few cocktails)
  • Ice
  • Apple for garnish

Instructions

  1. Make the apple honey simple syrup: Place the honey and water into a small sauce pan on medium heat. Stir until the honey dissolves and then remove from heat and store in the fridge until ready to use. 
  2. Combine the vodka, apple juice and .5oz of the apple honey simple syrup into a 16oz mason jar. 
  3. Fill the jar with ice and shake until well mixed. 
  4. Use the lid of the mason jar to strain and pour into an 8oz mason jar. 
  5. Garnish with apple slices and enjoy! 


Grain Bowl with Roasted Brussels Sprouts May 11 2020, 0 Comments

This grain bowl is a combination of some of my favorite foods. It's super filling and full of nutrients. Brussels sprouts are low in calories, but packed with vitamins and fiber, and broccoli is packed with vitamins C and K. Chickpeas are high in both protein and fiber and contain several essential vitamins and minerals. The egg adds a nice boost of protein and so does the quinoa. 

Prep time: 1.5 hours
Yield: 2
Serving Size: 1 bowl

Ingredients 

  • 2 cups of uncooked chickpeas
  • 1/2 cup of dry rice/quinoa blend
  • 1 pound brussels sprouts
  • 1 head of broccoli
  • 2 eggs
  • salt
  • pepper
  • olive oil
  • garlic powder

Directions 

  1. Roast the Chickpeas: preheat the oven to 450 degrees; drain the chickpeas and blot dry; mix in a bowl with olive oil, garlic powder, salt and pepper; spread out on a baking pan; bake for 30-40 minutes until crispy and brown. 
  2. Roast the Brussels Sprouts: preheat the oven to 400. Cut the ends off the Brussels Sprouts and then slice in half. Mix in a bowl with olive oil, garlic powder and some salt and pepper. Mix until all the florets are coated and then spread out on a baking sheet and bake for about 35-40 minutes, checking on them every 20 minutes. I found that spreading the Brussels sprouts out on the baking sheet so that the cut part is on the pan makes them crispier.
  3. Cook the rice/quinoa. 
  4. Sauté the broccoli florets.  
  5. Scramble the eggs. 
  6. Layer the bowls with the rice/quinoa on the bottom and the goodies on top.
